Carrot Muffins

1 egg
¼ cup vegetable oil
2 teaspoons vanilla
1 teaspoon almond fl avoring
½ cup granulated sugar
½ cup brown sugar
1½ cups grated carrots
¼ cup crushed pineapple, undrained
2½ teaspoons baking powder

1¾ cups gluten-free fl our mixture (See the Gluten-Free Flour
Mixtures on page 16)
¾ cup raisins
½ cup chopped walnuts
Q Preheat oven to 350°F. Spray 24 muffi n tins with nonstick
spray.
W In a large bowl, use a whisk to whip the egg until frothy.
E Whisk in the oil, vanilla, almond fl avoring, granulated sugar,
and brown sugar.
R Using a rubber spatula, stir in the carrots and crushed
pineapple.
T Add the baking powder, baking soda, salt, cinnamon, and
fl our mixture. Stir till blended.
Y Stir in the raisins and walnuts.
U Spoon the batter into the muffi n tins. Bake for 18 minutes or
until a toothpick inserted in the center of the muffi ns comes
out clean.
