⅓ cup orange juice
2 tablespoons orange zest
¼ cup applesauce
⅓ cup vegetable oil
2 teaspoons mayonnaise
2 teaspoons vanilla
2 eggs
½ cup brown sugar
2 cups gluten-free fl our mixture (See the Gluten-Free Flour
Mixtures on page 16)
2 tablespoons baking powder
¾ teaspoon cinnamon
½ teaspoon salt
Q Preheat oven to 350°F. Spray muffi n tins with nonstick spray.
W In a large bowl, whisk together the orange juice, zest, applesauce,
oil, mayonnaise, vanilla, and eggs until well blended.
E Stir in the brown sugar.
R Add the fl our mixture, baking powder, cinnamon, and salt.
Stir just until all ingredients are completely blended.
T Spoon the batter into the muffi n tins.
Y Bake for 20 minutes or until a toothpick inserted in the center
of the muffi ns comes out dry.U Let the muffi ns cool for 10 minutes before removing them
from the muffi n tins.
Note: Orange zest is grated orange peel. Grate the outside of the
orange on a grater but don’t grate so deeply into the skin that you
grate the bitter white layer inside.
