Peanut Butter Banana Muffins
1 egg
¼ cup mashed banana (about 1 banana mashed with a fork)
2 tablespoons peanut butter
1 teaspoon vanilla
1½ tablespoons vegetable oil
2 tablespoons milk (use casein-free soy milk or almond milk for
dairy-free diets)
¼ cup granulated sugar
¼ cup brown sugar
¼ teaspoon salt
1¼ cups gluten-free fl our mixture (See the Gluten-Free Flour
Mixtures on page 16)
1 tablespoon baking powder
1 teaspoon baking soda
½ cup chopped dark chocolate
Q Preheat oven to 350°F. Spray 12 muffi n tins with nonstick
spray.
W Break the egg into a large bowl. Whip with a wire whisk until
frothy.
E Add the banana, peanut butter, vanilla, oil, and milk and
whisk until smooth.R Whisk in the granulated and brown sugars.
T Add the salt, fl our mixture, baking powder, and baking soda.
Use a rubber spatula to blend all the ingredients.
Y Stir in the chocolate.
U Spoon the batter into the muffi n tins, fi lling each about twothirds
full. Bake for 20 minutes or until a toothpick inserted
in the center of the muffi n comes out clean.
