Pineapple Coconut Muffins
1 egg
⅔ cup vanilla ice cream, softened (use dairy-free ice cream for
dairy-free diets; Turtle Mountain makes dairy-free ice cream)
⅔ cup sugar
6 tablespoons pineapple preserves
1 tablespoon vegetable oil
2 teaspoons vanilla
1 tablespoon mayonnaise
1 cup gluten-free fl our mixture (See the Gluten-Free Flour Mixtures
on page 16)
2 teaspoons baking powder
1¼ teaspoons baking soda
¼ teaspoon salt
¼ cup shredded coconut
Q Preheat oven to 350°F. Spray 12 muffi n tins with nonstick
spray.
W In a large bowl, whisk the egg slightly.
E Whisk in the ice cream, sugar, preserves, oil, vanilla, and
mayonnaise.R With a rubber spatula, stir in the fl our mixture, baking powder,
baking soda, and salt.
T Stir in the coconut.
Y Fill each muffi n tin about two-thirds full with batter.
U Bake for 20 minutes or until a toothpick inserted in the center
of a muffi n comes out clean.
